Fresh from the islands
From moving boats to remote islands, our kitchens bring the sea and soil of Palawan to the table. Every dish of Philippines food tells a story of resourcefulness, flavour and connection.
Tao’s cuisine was born at sea — in smoky kitchens, over open fires and in borrowed island homes. We learned to cook with whatever was around us: fish caught from the boat, fruit found on shore, rice shared by neighbours. Out of necessity came creativity, and out of creativity, pride. At Tao Dipnay Farm the Kantina is our open-air kitchen and gathering place. Here, fishermen deliver their catch, farmers bring their harvest and cooks turn it all into meals that feed up to 90 guests a day. And it’s where we train our future chefs.
Onboard kitchens
Each boat carries a small kitchen – a single cook, a charcoal stove and endless imagination. Along the way, we buy produce from coastal villages or cast a line ourselves. Meals are always cooked fresh, seasoned with salt, smoke and sea air. After years of cultivating fruit and vegetables at the Farm and with partner growers, we’ve begun reimagining Filipino classics using what the islands provide: greens, roots and herbs from our gardens.
Communal meals
Meals at Tao are served family style, with everyone eating together. Around the table, laughter replaces formality; food becomes the language of belonging. Our cuisine is simple but intentional, creative but consistent. We grow, catch or trade for what we need, from coconuts to vinegar, pork to papaya. Every dish reflects the same values that shape Tao itself: self-reliance, generosity and respect for nature.
